Herb Tempeh and Sweet Peppers

A hearty, plant-rich salad with tempeh — tempeh is a great meatless option for everyone to enjoy as it’s rich in fiber, healthy fats, and protein.

Tempeh is the star of this recipe, and here’s why: it has a lot of probiotic benefits as it’s fermented soybean. It’s a great source of manganese, copper, and fiber, too. I’ve always been a fan of it as a nice meatless alternative.
