Ok so I’ve been making this dish, or a version of, for about 3 years now. Some weeks I make it three times in a week – it’s that easy and that yum. I’m of the “keep it simple” camp – the easier the dish the more likely I am to nourish my body in the right ways.
I also can’t tell you the number of times I’ve thought to myself “mmm… I really should type out this recipe and put it on my website so others can enjoy this quick fix mid week beauty-of-a-meal too!” So I’m sorry for that, but three years later, here I am.
The BEST thing about this dish is the ease of it. These days I don’t measure a thing. I grab a plate or bowl, sprinkle it with the spices I feel like that day and then roll my chicken in it, whip it in the oven and 8 minutes later I’m eating dinner. It’s no bloody wonder I eat it 3 times a week now is it.
Now, know this. You don’t have to follow my recipe below. Maybe you prefer different spices, like coriander powder or cinnamon. Perhaps a bit of sumac? What ever the case, go for you life. Just know that you can be very liberal with the spices here.
2 chicken breasts, cut into long strips
1 heaped teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/4 teaspoon ground ginger
1/4 teaspoon sea salt
1/4 – 1/2 teaspoon chilli powder
Freshly ground black pepper
1-2 teaspoons olive oil
Preheat your oven to 200 degrees celsius. Line a baking tray if you so wish.
Combine the spices on a plate or in a bowl. Then, using your hands roll the strips of chicken around in your spices until they are evenly coated. Then, drizzle in your olive oil and coat evenly.
Lay the chicken strips out on your baking tray so they are not touching. Pop them into the oven for 8 minutes max. Do not over cook or they will become dry and who wants dry chicken!
Remove from the oven and serve with a beautiful fresh salad or even some simply roast veg. I like mine with a fat dollop of homemade pesto too.
